Who can resist a great burger? We know we can’t, so this #MeatlessMonday we’re giving you a delicious and easy recipe inspired by Mediterranean flavors.
These falafel with avocado hummus sliders are life-changing. They are loaded with vitamins to boost good cholesterol and flavor to boot from the hummus, grab one today on #MeatlessMonday!
FALAFEL SLIDERS
1 15 oz can chickpeas; rinsed, drained + divided
½ red onion
2 cloves garlic
5 sundried tomatoes packed in oil, drained
½ cup fresh Italian parsley
1 tsp ground cumin
1 tsp ground coriander
½ cup chickpea flour
2 Tbsp olive oil
1 tsp sea salt
AVOCADO HUMMUS
¼ cup chickpeas, reserved from sliders
1 avocado, pitted and peeled
1/3 cup packed fresh Italian parsley
¼ cup olive oil
1 clove garlic
1 Tbsp lemon juice
½ tsp sea salt
¼ tsp thyme
SERVING
14 slider buns or dinner rolls, sliced in half + toasted
2 small tomatoes, thinly sliced
2 red onions, thinly sliced

FALAFEL SLIDERS
Reserve ¼ cup chickpeas for the Avocado Hummus (below).
Place remaining chickpeas, red onions, garlic, sun dried tomatoes, fresh parsley, ground cumin, ground coriander, sea salt, and chickpea flour in a food processor and pulse until combined, stopping frequently to scrape down sides.
Using the palms of your hands, form mixture into 2-inch by ½-inch patties.
In a large nonstick skillet, heat olive oil over medium-high heat and pan-fry sliders in batches, letting them cook about 3 to 5 minutes on each side, until nicely browned.
Make sure to not crowd the pan. Remove from pan and drain on paper towels.
AVOCADO HUMMUS
Combine ¼ cup chickpeas, avocado, fresh parsley, olive oil, garlic, lemon juice, sea salt and thyme in food processor and puree.
Adjust seasoning to taste.
TAHINI SAUCE
Puree tahini, water, garlic, lemon juice, and sea salt in a food processor until smooth.
BUILD
Toast buns and slice in half.
Layer the Falafel Sliders, Avocado Hummus and Tahini Sauce with thinly sliced tomatoes and red onions on the toasted buns.
NOTES + SERVING TIPS
Serve immediately.
The Falafel Sliders can be made in advance and frozen for up to 1 month or kept refrigerated for 3 to 4 days until ready to cook.
The Tahini Sauce can be made in advance and kept refrigerated for 2 to 3 days.
