This is seriously one of the easiest desserts to make and perfect for a Summer soiree!
Word to the wise: this recipe is best enjoyed when peaches are at their peak in the months of July and August.
Bake in a large pan, or dispense into ramekins for cute individual peach cobblers that are sure to impress!
DOUGH
1 1/3 cup all-purpose flour
2 Tbsp organic sugar, plus extra for sprinkling
1½ tsp baking powder
½ tsp sea salt
¼ cup canola oil or vegan margarine
½ cup non-dairy milk plus extra for brushing
FRUIT
½ cup organic sugar
2 Tbsp all-purpose flour
1 tsp ground cinnamon
5 fresh peaches, peeled, pitted, and sliced

PREP
Pre-heat oven to 375°.
DOUGH
In a medium bowl, whisk together all-purpose flour, organic sugar, baking powder, and sea salt.
In a separate bowl, whisk together canola oil or vegan margarine and non-dairy milk, and add to the flour mixture. Mix until combined. It should be sticky and doughy, not tough. Do not over mix.
FRUIT
In a medium bowl, whisk together organic sugar, all-purpose flour, and ground cinnamon.
Add sliced peaches to sugar mixture and toss until fully coated.
BUILD
Pour peaches into an 8-or-9 inch baking pan or distribute into individual ramekins. Using a tablespoon, scoop the dough over the peaches. Brush the top of the dough with non-dairy milk and generously sprinkle with organic sugar.
Bake for 45 minutes or until thoroughly cooked and lightly brown on top. Be sure to rotate after 20 minutes to bake evenly.
