- 1 cup butter, melted
- 2 tbsp paprika
- 2 tbsp rubbed sage

- Butter your chicken generously with melted butter, including under the skin and inside of the cavity.
- Season the chicken all over with paprika, rubbed sage, salt, and black pepper — don’t be shy!
- Stuff the cavity of each chicken with celery and onions. If you prefer stuffing, mix it in with the celery and onions before stuffing the cavity.
- Tie the drumsticks together with kitchen twine for more even cooking.
- Roast in preheated oven for around 1 hour and 30 minutes or until golden brown on the outside and cooked through (use a meat thermometer to check that internal temperature has reached at least 165°F).
- Let rest for at least 10 minutes before carving into the juicy, flavorful meat.
- Serve with fleur de salt and croutons if desired.
So now you know my secret to creating an easy but flavorful roasted chicken. Don’t forget to save any leftovers for making soup or sandwiches – it’ll taste just as delicious as when it’s freshly roasted!
Substitutions and Variations
Are you looking to switch things up with Lolly’s Roast Chicken Recipe? Luckily, there are plenty of substitutions and variations to keep things exciting in the kitchen.
Firstly, if you want a different flavor profile, try swapping the paprika for smoked paprika or even hot chili powder. You can experiment with different herbs too. Rosemary, thyme or a combination of both would be delicious with the buttery chicken.
For an extra crunch, try using croutons as a substitute for bread cubes in the sage stuffing. The added texture will bring something new and exciting to this classic dish.
If you’re not a fan of celery, swap it out for diced carrots or red bell pepper. Yellow onions can also be replaced by white onions or shallots for a milder flavor.
For a healthier version of Lolly’s Roast Chicken Recipe, remove the skin from the chicken before roasting. You’ll still get all of that savory flavor without the added fat.
To add some heat to your dish, sprinkle on some red pepper flakes or cayenne pepper. Black pepper is great too, but don’t be afraid to venture outside of your comfort zone.
Finally, if you’re feeling adventurous, try making chicken lollipops instead of roast chicken. These drum lollies – butterflied chicken legs with bay leaf – are similar in flavor to Lolly’s Roast Chicken Recipe but offer a unique presentation.
These substitutions and variations will take Lolly’s Roast Chicken Recipe to new heights, impressing both yourself and your dinner guests.
Serving and Pairing
Now that your lolly roast chicken is out of the oven and your kitchen smells like heaven, it’s time to serve and enjoy! As for serving, I recommend letting the chicken rest for at least 10-15 minutes before carving into it. This will allow the juices to redistribute and prevent them from running all over the plate. Trust me; this step is essential to achieve a juicy and flavorful chicken.
When it comes to pairing, this easy flavorful roasted chicken goes well with a variety of sides. Traditionally, sage stuffing, paprika roasted potatoes or croutons served alone make fantastic choices, but there is a whole world of delicious options beyond these classics.
If you are looking for something light and fresh, consider serving it alongside a Waldorf salad with sweet apples, celery and crunchy pecans. Or if you prefer something heartier, go for some mashed sweet potatoes or roasted carrots glazed with truffle oil.
In terms of beverages, there’s nothing quite as satisfying as enjoying this roasted chicken recipe with an ice-cold beer. For a more formal or celebratory atmosphere, opt for a full-bodied red wine such as Cabernet Sauvignon or Syrah to complement the flavors of the chicken.
No matter how you decide to serve your chicken lolly roast, it would be best if you did so with confidence. Remember that food is an experience that should be enjoyed, so put on some good music, gather your loved ones around the table and enjoy every bite!
Make-Ahead, Storing and Reheating
Now that you have successfully roasted your chicken, you might be wondering about the proper way to store and reheat it. Worry not, as I have some tips for ensuring the best possible results when it comes to make-ahead, storing and reheating.
If you plan on serving the chicken later or making it ahead of time, let it cool to room temperature before storing it in an airtight container in the refrigerator. The cooked chicken can last up to four days if stored properly.
To reheat the chicken, preheat your oven to 350 degrees Fahrenheit. Put the chicken in a baking dish with any juices or sauce from the pan and cover with foil. Place it in the preheated oven and heat until warmed through, which usually takes about 15-20 minutes.
If you want a faster way to reheat your chicken, use a microwave but make sure to use defrosting mode and not cook mode in order to prevent overcooking. Defrost the chicken for at least five minutes before heating it up in the microwave on high setting using one-minute increments.
While reheating in an oven or microwave are both convenient methods, you may find that frying leftover chicken is a great way to keep them crisp and moist even after being refrigerated. To fry your leftovers, heat enough oil in a large pan and heat over medium-high heat. Fry each piece of leftover roast chicken for about two minutes per side until heated through and crispy.
The carcass of the roast chicken can also be used for making soup or broth with extra veggies such as onions, celery or bay leaf. Chicken broth made out of the carcass can be stored for up to six months in the freezer so you can easily whip up soup anytime.
By learning these tricks of make-ahead, storing and reheating leftover roast chicken properly, you can get more out of each cooking session while ensuring that every plate is just as lip-smackingly delicious as its very first serving.
Tips for Perfect Results
If you want to achieve excellent results with Lolly’s Roast Chicken recipe, there are several tips and tricks that will help you cook the perfect roast chicken. These tips range from simple preparation advice to the cooking process itself. I’ve listed them down for your reference and ease of application.
First and foremost, always preheat your oven before cooking the chicken. This will ensure that the temperature remains consistent throughout the cooking process. It is also recommended to cover the chicken in the first half of cooking time to keep it moist.
Secondly, don’t skimp on seasoning your chicken with paprika, rubbed sage, salt, and fresh ground black pepper before putting it into the oven to roast. These spices impart a rich and sophisticated flavor to the chicken. Be sure to use proper seasoning measurements as using too little or too much can affect your chicken’s food profile.
Another useful tip is to baste the chicken every 15-20 minutes with melted butter or truffle oil when roasting it. This will add both moisture and flavorfulness to your roasted chicken, keeping it moist yet crispy on the outside.
When using croutons or sage stuffing inside the cavity of the chicken or as garnish after roasting, ensure they are adequately seasoned with fleur de lolly or any salt of your choice for elevated flavors.
Furthermore, when preparing the ingredients for stuffing, always sauté celery and large yellow onions in butter (or oil) before mixing them with breadcrumbs, bay leaf powder 1, rubbed sage 2 tsp, and poultry seasoning 1 tsp. Sautéing makes them soft and offers aromatic harmonization with other flavors in the dish, producing unforgettable tastes.
Lastly, let the roasted chicken rest for about ten minutes before carving it so that juices settle properly into the meat’s fibers. This guarantees juiciness and maximum flavors throughout each bite of your roasted chicken.
By following these simple tips when making Lolly’s Roast Chicken recipe, you’ll be able to create an easy flavorful roasted chicken at home that everyone will love!
FAQ
As you read through the recipe and prepare to make your roast chicken, questions may arise or concerns may crop up. To help ensure the best cooking experience, here are some frequently asked questions and answers about Lolly’s Roast Chicken Recipe.
Why is my roast chicken not juicy?
When cooking a chicken or roast, it’s important to resist the temptation of taking it out of the oven at the exact temperature. To allow the meat’s internal juices to continue circulating throughout, you should remove it 5 degrees before it reaches the desired temperature. This process is known as “carry-over cooking” and it helps to ensure that the flavors of the meat are fully developed. Cutting into it too soon will cause you to lose those delicious juices. So, my tip for you is to let the chicken rest before carving it up.
Should you put tin foil over roast chicken?
When it comes to roasting chicken, it’s best to avoid covering it with foil unless absolutely necessary. The reason being is that you want your chicken to brown nicely, and covering it with foil can prevent that from happening. However, if you find that the chicken is becoming overly browned on top near the end of the cooking time, you can use foil to shield it while still allowing it to cook through.
Should chicken be covered when roasting?
Achieving crispy skin on a roasted chicken is a breeze without the need for a cover during cooking. This is because the roasting duration is sufficient for the skin to turn an appetizing golden-brown.
Why does my roast chicken take so long to cook?
When it comes to cooking dark meat like chicken thighs or legs, it’s important to keep in mind that they require more time in the oven as compared to lighter pieces of meat like breasts. The reason behind this is because the higher fat content and density of dark meat slows down the cooking process. If you’re cooking boneless chicken thighs, then you will need to set the temperature at 350F and cook them for 20-30 minutes depending on the size. However, if you’ve got bone-in cuts, you’ll need to add another 15 minutes to the cooking time for them to be done right. This will ensure that the meat is properly cooked through and juicy.
