- Tip: You can use a meat mallet or the bottom of a heavy skillet.
- Season with kosher salt and fresh ground black pepper on both sides.
Step 2: Coat the chicken
- In a shallow dish, mix together 1 cup of whole wheat flour, 1 teaspoon kosher salt, and 1/4 teaspoon fresh ground black pepper.
- In another shallow dish, beat 2 eggs with a fork until it’s foamy.
- Dip each chicken breast into the flour mixture, then the egg mixture, letting any excess drip off.
- Lay the coated chicken breasts on a plate.
Step 3: Bread the chicken
- In another shallow dish, mix together 2 cups of panko breadcrumbs and 1/2 cup of grated parmesan cheese
- Dredge each chicken breast in this mixture, pressing firmly so that it adheres well.
Step 4: Cook the chicken
- Heat up 2 tablespoons of olive oil in an oven-safe skillet over medium heat.
- Tip: If you don’t have an oven-safe skillet, transfer the chicken to an oven-safe baking dish after cooking on the stove.

- Remove from heat and top each chicken breast with:

Substitutions and Variations
While this chicken parmesan recipe is already a gem, there are plenty of substitutions and variations you can make to spice things up in the kitchen. From swapping out ingredients to trying different cooking methods, the possibilities are endless.
First, consider using different types of cheese to vary the flavors and textures in your dish. Swap out the mozzarella cheese for something sharper like provolone, or mix in some ricotta for a creamy twist. If you’re feeling adventurous, try adding blue cheese crumbles for a bold flavor.
Another way to switch things up is by changing the type of meat you use. While boneless skinless chicken breast is what we recommend for this recipe, you could also use thin-sliced chicken cutlets or even veal cutlets for a fancier version of the dish. Those who prefer plant-based options could even try using tofu or seitan as a substitute.
If you’re looking for a healthier alternative to the traditional breaded and fried chicken parmesan, try baking it instead! Coat the chicken breasts in a mixture of ground black pepper and kosher salt, dip in beaten egg and whole wheat flour, then bake on a greased baking sheet at 350º for 25-30 minutes.
Finally, don’t be afraid to experiment with different sauces and toppings. Instead of marinara sauce, try using pesto or alfredo sauce. Add some sliced grape tomatoes and sautéed mushrooms on top of your chicken before covering with cheese for extra flavor and texture.
So go ahead and get creative! With these substitutions and variations in mind, you’re sure to impress your taste buds (and your dinner guests) with your delicious twists on this classic recipe.
Serving and Pairing
Jenn’s Chicken Parmesan is a savory, hearty dish that pairs well with a variety of side dishes and drinks. When it comes to serving, you can opt for an elegant dinner party or a comforting family meal. For a more upscale presentation, try serving the Chicken Parmesan with a mixed greens salad that has been tossed in a light vinaigrette. The acidity in the dressing serves to cut through the richness of the chicken and cheese, resulting in a well-balanced meal.
On the other hand, if you are looking for something more casual, serve Jenn’s Chicken Parmesan with your favorite pasta. The cheese and tomato sauce mingle perfectly with noodles to make every bite burst with flavor. Some popular pasta options include spaghetti or linguine coated in olive oil, garlic, and parmesan cheese. You can also mix in some roasted vegetables or sautéed mushrooms to add complexity to the dish.
When it comes to beverages, pair Jenn’s Chicken Parmesan with either red or white wine based on personal preferences. For red wine enthusiasts, go for a bold cabernet sauvignon or chianti to complement the robust flavors of the dish. On the other hand, for white wine lovers, opt for a crisp pinot grigio or sauvignon blanc which will cut through the creaminess of the cheese sauce.
In summary, Jenn’s Chicken Parmesan is a versatile dish that can be customized to suit any occasion by pairing it with different side dishes and beverages. No matter how you choose to serve it, this mouth-watering recipe is sure to impress your guests every single time!
Make-Ahead, Storing and Reheating
Now that you’ve mastered the art of making Jenn’s Chicken Parmesan, it’s time to think ahead and plan for leftovers. This dish can be easily made ahead and stored for later consumption or reheated the next day.
To make ahead, simply prepare the recipe as usual, but stop before baking in the oven. Cover with plastic wrap and refrigerate for up to 2 days. When you’re ready to bake, let the dish come to room temperature before placing it in the preheated oven.
For storing leftovers, keep any uneaten portions in an airtight container in the fridge for up to 3 days. To reheat, place a portion in the microwave or in a preheated oven at 350°F for 10-15 minutes until heated through.
If you have leftover chicken parmesan cutlets, they can be used as toppings for salads or sandwiches. For best results, store them separately from any sauce or pasta as it can make them soggy.
One tip to help preserve the freshness of your chicken parmesan is to place a small piece of parchment paper on top of the cutlets before sealing it in an airtight container. This will help prevent moisture from collecting on top of the chicken which can cause it to become soggy.
By knowing how to properly make-ahead and store your chicken parmesan, you can enjoy this delicious dish for multiple meals and even experiment with different serving options. So go ahead and indulge in another bite of Jen’s Chicken Parmesan without having to worry about wasting any leftovers!
Tips for Perfect Results
As a professional chef, I know that the simplest of dishes can be the most challenging to prepare perfectly. Chicken parmesan seems like an easy dish but a few mistakes can ruin everything. Here, I will reveal a few tips to ensure you cook the perfect Jenn’s chicken parmesan every time.
The first thing to remember is to season your chicken breast before breading it. It may seem obvious, but many people skip this step, thinking the tomato sauce and cheese are enough to add flavor. However, by seasoning your chicken with fresh ground black pepper and kosher salt before breading it, you enhance its taste and provide a better base for the other ingredients in the recipe.
When frying your chicken breasts for Jenn’s chicken parmesan recipe, use olive oil instead of vegetable oil for better flavor. Olive oil also produces crispier crust on the chicken than vegetable oil or shortening does.
Another essential tip for making Jenn’s chicken parmesan is to make sure the pasta is properly cooked. It may be tempting to slightly undercook as you are planning to bake it with other ingredients later, but this could ruin your dish. Cook until al dente according to directions and let drain but do not rinse pasta with cold water.
Do not skimp on cheese! Make sure you get good quality parmesan cheese and mozzarella cheese. Grating your own parmesan cheese will guarantee a richer sauce because the pre-grated version often included anti-clumping agents that can affect texture which alters taste.
Finally, let’s talk about cooking time. Jenn’s Chicken Parmesan recipe cooks for about 35 minutes in 350°F oven temperature. Make sure you don’t overcook your chicken which will result in dry poultry.
By following these tips, you’ll be sure to end up with perfect Jenn’s chicken parmesan every time. Experimentation and correction are key skills in any kitchen so if at first, you do not succeed – try again!

Jenn’s Chicken Parmesan Recipe
Ingredients
- 1 lb boneless skinless chicken breast
- 1 egg
- 2 tablespoons water
- 1/2 cup whole wheat flour
- 1/2-3/4 cup Italian breadcrumbs
- 2 tablespoons olive oil
- 1 teaspoon red pepper flakes
- 1/2 vidalia onion, diced
- 1 -2 fresh garlic clove, minced
- 1/2 pint fresh mushrooms, cleaned and quartered
- 1 pint grape tomatoes, rinsed
- 1/3 lb whole wheat spaghetti, cooked and drained
- 2 tablespoons olive oil
- 2 tablespoons fresh basil, chopped
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, shredded
- kosher salt
- fresh ground black pepper
Instructions
- Set a big pot of water to boil for the pasta. Cook as directed.
- Put each chicken breast, one at a time, into a gallon-size zippie bag. Use a kitchen mallet or a heavy skillet to pound the chicken to about 1/2 inch thick. This is a great step for getting out frustrations.
- In a large bowl, beat together the egg and the water.
- Now, you want to have a station set up for this next part. A plate with flour, a plate with the egg and a plate with the breadcrumbs. With each chicken breast you need to coat each breast in this order: flour, egg wash then breadcrumbs.
- After each breast has been properly coated, set them on a plate to the side.
- In a medium skillet, saute diced onion in 1 Tbs olive oil until they turn opaque, about 4-5 minutes, then add the red pepper flake and the mushrooms and saute and additional 6-8 minutes. Then add the grape tomatoes to the skillet. Let them saute for a few minutes until they soften, then using your wooden spoon, crush each tomato. If it’s too hard to crush, let it cook just a bit longer.
- Add salt and pepper to taste, and continue cooking until tomatoes are very soft and mixed with the rest of the veggies. Right at the end, add half of the chopped basil.
- You should be cooking the chicken at the same time that you are cooking the sauce. When you are waiting on the onions and/or mushrooms to cook, this is a good time to get the chicken going.
- Preheat 1 TBS olive oil in another large skillet or griddle over medium heat. Also, preheat your broiler.
- Cook the chicken breasts for 4-5 minutes then flip and cook 3-4 additional minutes.
- After each breast is cooked in the skillet, place them on a baking sheet and top with some of the sauce, then top with a mixture of both cheeses. Place under the preheated broiler until cheese is melted and golden bubbly.
- While this is working, toss the cooked pasta with the remaining tomato mushroom sauce.
- Plate some pasta and a chicken breast on each plate and top with remaining freshly chopped basil.
