Ingredients
  

  • 2 cups short-grain sushi rice
  • 2 cups water
  • 1/4 cup rice vinegar
  • 1 tablespoon of cane sugar
  • 1 teaspoon of salt
  • 2 ripe avocados sliced
  • 2 sheets of nori seaweed
  • 1 tablespoon of sesame seeds optional

Instructions
 

  • Rinse the sushi rice in a large bowl until the water runs clear. Add 2 cups of water and bring it to a boil in a small pot. Reduce the heat to low and cover with a lid. Cook the rice for 18-20 minutes, or until the water is absorbed.
  • In a small bowl, mix together the rice vinegar, cane sugar and salt until the sugar and salt are dissolved.
  • Once the rice is cooked, transfer it to a large bowl and gently stir in the vinegar mixture with a wide spatula or rice paddle. Let the rice cool to room temperature.
  • Place a sheet of nori on a bamboo sushi mat shiny side down. Wet your hands and take a small amount of rice and spread it evenly over the nori, leaving a 1/2 inch border at the top.
  • Place the avocado slices in a line on top of the rice, about 1 inch from the bottom. Sprinkle with sesame seeds (if using)
  • Roll the sushi tightly with the help of the bamboo mat, using the 1/2 inch border at the top to seal the roll.
  • Use a sharp knife or serrated knife to cut the roll into 6-8 pieces. Serve with soy sauce and wasabi on the side.
