The Recipe How-To
Step 1: Marinate the Chicken
To make the achari chicken, start by marinating skinless chicken breasts in a mixture of plain yogurt, ginger garlic paste, green chilies, and a blend of spices. In a medium-sized mixing bowl, combine 1 cup of plain yogurt, 2 tbsp of ginger garlic paste, 2-3 chopped green chilies, and the following ground spices: 1 tsp of chili powder, 1 tsp of ground cumin, 1 tsp of ground coriander, ½ tsp of turmeric, 1 tsp of mango powder (amchur), and 1 tsp of fenugreek seeds.
Mix the marinade until well combined and add in approximately two pounds of cubed boneless chicken pieces. The longer you marinate the chicken (a minimum of one hour), the more tender and flavorful it will become. You can marinate the chicken for up to eight hours for best results.
Step 2: Cook the Achari Chicken
Once your chicken is thoroughly marinated, it’s time for cooking! You can make this recipe on an instant pot or on the stove top with a dutch oven or heavy-bottomed pan.
Heat up a neutral oil such as vegetable or canola oil in your instant pot or cooking vessel of choice. Toast some seeds including nigella, mustard, and fennel seeds. Once fragrant add chopped onions cook these until soft and golden brown. Add in your marinated chicken along with a tablespoon each of pickling spices like fennel seeds, mustard seeds, fenugreek seeds, and finally nigella seeds. Add diced fresh tomatoes or canned diced tomatoes. Fresh tomatoes work best in this recipe since they lend an acidic quality to the curry which compliments its overall tangy flavor. Sauté all ingredients together for about five minutes.
From there on out, i.e., simmer over medium-low heat until chicken pieces are cooked through about fifteen to eighteen minutes.
Serve and Enjoy
Garnish your Achari Chicken with chopped fresh cilantro leaves over steamed basmati rice or naan bread. Now your delicious bold tangy Achari chicken curry is ready to be served alongside mouth-watering pakoras or mango lassi.

Serving and Pairing
Achari chicken is a classic Indian curry that stands out for its bold flavors and tangy taste. When it comes to serving and pairing this mouthwatering dish, there are plenty of delicious options that can take it to the next level.
One great way to serve achari chicken is with steamed or fluffy basmati rice. The nutty flavor and light texture of the rice complement the complex spices in the curry, creating a perfect harmony on your taste buds. You can also try making some fresh naan bread to soak up all the rich sauce in the dish. The pillowy bread, lightly brushed with butter, will add a perfect touch of sweetness and richness to the meal.
If you’re looking for something on the lighter side, you can serve achari chicken with a crisp mixed salad. The fresh greens and veggies balance out the bold flavors of the dish, while adding some much-needed crunch and freshness to each bite.
For those who prefer a little heat, adding some sliced jalapenos or green chilies can take this dish to another level altogether. These spicy ingredients add a nice kick to the tangy chicken curry, making it even more irresistible.
When it comes to pairing, an ice-cold lager or pilsner can be an excellent choice. The lightness and effervescence of these beers cut through the richness of the curry, while complimenting its spicy character at the same time.
Overall, serving and pairing options for achari chicken are many and varied. Whether you go for rice, naan bread, or veggies with your curry – one thing is sure – this dish is guaranteed to be a crowd-pleaser for any occasion.
Make-Ahead, Storing and Reheating
One of the things I love most about this Achari Chicken recipe is its versatility. Not only is it delicious straight off the stove, but it’s also perfect for meal prepping and storing for later.
To make ahead, simply prepare the recipe as directed and store it in an airtight container in the fridge for up to three days. When you’re ready to eat, reheat it in the microwave or on the stovetop until hot.
If you’re planning on storing it for longer than three days, I would recommend freezing it instead. To do this, cool the chicken curry completely before transferring it to a freezer-safe container. Label and date the container, then freeze for up to three months. When you’re ready to enjoy it, thaw overnight in the fridge then reheat using your preferred method.
When reheating any leftovers or frozen portions, be sure to add a splash of water or broth to loosen up the sauce and prevent it from becoming too dry. You may also need to adjust the seasoning with a little extra salt or spices.
Overall, this Achari Chicken recipe is perfect for anyone looking for a quick and easy meal prep option that can be enjoyed now or later without sacrificing any taste or quality.
Tips for Perfect Results
Preparing a flavorful and delicious achari chicken curry is an art that requires technical knowledge and techniques. Here are some tips that will help you achieve the perfect achari chicken recipe with bold and tangy flavors.
1. Toast the Seeds Correctly
Toasting the seeds before crushing them can bring out the aromas, and make your dish even more flavorful. It enhances the flavors of your spices effortlessly in little to no time. For toasting your spices, use a dry skillet over medium heat to roast them individually until they become fragrant. Ground them in a mortar-pastel or coffee bean grinder for better texture.
2. Marinate Your Chicken Well
Marinating chicken well saves time, and it is the key to moist, tender, and juicy bites. Incorporate achari masala into whisked yogurt and coat the boneless chicken cut into bite-size pieces for at least two hours before cooking. This ensures that every piece of chicken is packed with flavor from each spice-infused segment.
3. Adjust Acidity Level to Taste
Adjusting the acidic level gives your recipe the perfect balance of sourness that complements spicy bites. For tangy flavor in your Achari chicken curry masala, add lemon juice or amchoor powder.
4. Cook Them Until They Are Fully done
Cook the marinated chicken on low heat until it’s fully cooked without overcooking it, this way every bite is succulent giving you the perfect earthy balanced taste of achari masala.
5. Experiment with Different Meat Cuts
Experimenting with different meat cuts can transform your recipe altogether while preserving its traditional characteristics. Add pickled meat or other meat cuts such as bone-in thighs or legs with skin on, for extra richness and piquancy to prepare Achari Murgh using an instant pot, stove-top, or grill.
