Healthy Peanut Butter Chocolate Fudge

You know that pure bliss moment when you make something that is just downright amazing, and you know it’s going to be a staple from that day forward?

Maybe that feeling is a bit foreign to you, but you’ll know what we mean after trying out this recipe.

When we first made this fudge, we had no idea how it would turn out. I mean it literally calls for zero of the traditional ingredients in real fudge. Needless to say it turned out well!

The best part about this fudge is that it’s healthy! You’ve got all the great fats and amazing healthy benefits of coconut oil, the antioxidants from pure maple syrup, and protein from almond butter.

This concoction is full of healthy fats and deliciousness, and it’s super easy to make. Try it for yourself and enjoy a sweet treat during a busy week (like Fashion Week or Back to School).

Ingredients

1/2 cup coconut oil, melted

1/3 cup pure maple syrup

1/4 tsp pure vanilla extract

1 1/2 cup almond butter (or your favorite nut butter)

sea salt, to taste

1/2 cup cocoa powder

Prep

Line a small square pan with parchment paper.

Method

In a small bowl, combine coconut oil, pure maple syrup, pure vanilla extract, almond butter and sea salt until smooth.

Pour half of the mixture into another small bowl.

Add the cocoa powder to one of the bowls. Stir to combine.

Pour the plain chocolate mixture into the parchment-lined pan and spread evenly.

Using a spoon, drop small spoonfuls of the almond butter fudge around the pan, leaving some chocolate spaces uncovered.

Use a butter knife to swirl the two fudges together in a pretty pattern.

Cover the fudge with plastic wrap and place in the refrigerator for 1 to 2 hours.

Notes + Serving Tips

Slice the fudge into small pieces and serve immediately to avoid melting.

Store in a sealed container in the refrigerator or freezer for up to 1 week.
