Sauce
3 Tbsp soy sauce
1 tsp sesame oil
1 tsp liquid aminos
2 Tbsp organic brown sugar
1 Tbsp lime juice
1 tsp sriracha
Ingredients
1 Tbsp coconut oil
1 small onion, chopped
3 cloves garlic, minced
1 Tbsp ginger, minced
1/2 cup carrots, chopped
1/2 cup bell peppers, chopped
1/2 – 3/4 cup pineapple, chopped
Prep
Bring your cooked rice to room temperature.
Sauce
In a small bowl, combine soy sauce, sesame oil, liquid aminos, organic brown sugar, lime juice, and sriracha.
Whisk to combine and set aside.
Method
Heat a large pan or wok over medium heat.
Add coconut oil followed by the chopped onion, minced garlic, and minced ginger.
Saute until onions are translucent.
Add chopped carrots and chopped bell peppers and cook until they reach the desired softness.
Add the cooked rice and pineapples, followed by the sauce.
Stir to combine and cook until everything is well coated.
Serve garnished with sliced scallions and chopped cashews.
Notes + Serving Tips
Serve inside of a hollowed out pineapple for a special plating effect when guests are over.
