Today happens to be National Rum Day. We’re big fans of rum, but we feel like it just doesn’t get the same love that vodka, tequila, and whiskey do.
Whether it’s white rum, dark rum, or spiced rum, you just can’t help but feel transported to a Summery oasis when sipping on a rum cocktail.
Vegan chef, Lauren Kretzer, is also a fan of the spirit and took inspiration from her travels in the Caribbean for this rum cocktail. Inspired by the traditional cocktail known as the “Painkiller” in the British Virgin Islands, this version kicks it up a notch with pure vanilla extract and the essential fresh ground nutmeg.

Ingredients
2 oz orange juice
1 1/2 oz coconut milk
2 oz pineapple juice
2 oz dark rum
1/2 tsp pure vanilla extract
Ice cubes, as needed
whole nutmeg, to garnish
orange wedge, to garnish
Prep
Place a double old fashioned glass in the freezer to chill.
Method
In a cocktail shaker, add orange juice, coconut milk, pineapple juice, dark rum and pure vanilla extract.
Shake the ingredients (without ice) and pour into your chilled double old fashioned glass over ice cubes.
With a microplane or grater, grate whole nutmeg (it’s essential that it is whole nutmeg and not ground!) over the top for garnish.
Place an orange wedge on the rim of the glass.
