One of our favorite traditions on Independence Day is also one of the most American things you can possibly do… Take all kinds of foods and make them into American flags.
Our top fav food? Cake! But we’re not just making your typical cake with a flag on top, we’re making a cake with a yummy surprise!
We’re infusing our cake with some delicious red gelatin to give it a fun colorful surprise in the center along with a soft texture and extra punch of flavor. It’s a delightful treat someone on our team has been eating every 4th of July her entire life! *gasp*

Ingredients
3 cups non-dairy milk
2 Tbsp apple cider vinegar
4 cups all-purpose flour
2 1/2 cup organic sugar
3 tsp baking soda
3 tsp baking powder
2 Tbsp cornstarch
2 tsp kosher salt
1 cup coconut oil
4 tsp pure vanilla extract
1 tsp almond extract
1 package of red vegan gelatin
1 cup water
Prep
Preheat the oven to 350°.
Lightly grease and line a 9” x 13” cake pan with parchment.
Method
In a large bowl, combine non-dairy milk and apple cider vinegar.
Mix and let stand.
In a separate medium bowl, combine all-purpose flour, baking soda, baking powder, cornstarch, and kosher salt.
Add the organic sugar, coconut oil, pure vanilla extract, and almond extract to the non-dairy milk mixture.
Whisk to froth.
Add the dry ingredients to the wet ingredients a little at a time, mixing to combine.
Pour the batter into the pan and bake for 25-30 minutes or until a toothpick inserted into the middle of the cake comes out clean.
Remove the cake and let cool.
Red Gelatin
Using a fork, poke holes all over the surface of the cake.
Bring 1 cup of water to a boil.
Combine the packet of red vegan gelatin with the water and stir to combine.
Carefully pour or spoon the gelatin mixture over the cake, placing more in some areas than others.
Place the entire cake in the refrigerator for 1 hour or until set.
Garnish
Once the cake is set, remove it from the pan and place it on a serving board.
Use the Coconut Whipped Cream to frost the entire cake.
To make the blue star section of the flag, take the blueberries and carefully create a small rectangle 1/3 of the way in from the left and 1/2 way down from the top.
Using the raspberries, create horizontal stripes on the rest of the cake, leaving areas of white icing in between to represent the white stripes.

For best results, serve this cake cold.
Refrigerate for best results and eat within 3 days. This shouldn’t be a problem, we suspect!
