Apricot Cherry Pie

All of us awesome nerds out there know that today is a special holiday… Pi Day!

Maybe math wasn’t your favorite subject and you’re wondering what the big deal is… No worries, we just love any excuse to eat some pie.

We grabbed some of our favorite early Spring fruits, a stencil, and celebrated with this delicious pie.

Enjoy it for yourself!

Ingredients

2 pie crusts

1 ½ pounds apricots, pitted and quartered

1 ½ pounds cherries (can be fresh or frozen), pitted

2 tsp pure vanilla extract

¾ cup organic sugar plus extra for decorating

3 Tbsp cornstarch

2 tsp lemon juice

2 Tbsp vegan margarine

Parchment paper or Pi symbol cookie cutter

PREP

Preheat the oven to 400°.

FILLING

Combine apricots and cherries in a large mixing bowl.

Add pure vanilla extract, organic sugar, and lemon juice.

Stir to combine.

Sprinkle cornstarch over the mixture, and stir to coat evenly.

Set aside.

Crust

Using the pie crust, roll out one crust and carefully place in the pie plate.

Press into the plate and allow the extras to hang over the sides.

Roll out the second crust.

Use a Pi symbol cookie cutter to cut a Pi symbol out of the crust.

If not using a cookie cutter or stencil to create your Pi symbol, roll out a 9-inch piece of parchment paper.

Either draw or carefully trace (using a non-toxic writing tool) a large Pi symbol on the parchment.

Carefully cut out the Pi symbol in the parchment.

Place the cut out parchment Pi symbol on top of the pie crust.

Using a paring knife, carefully cut out the Pi symbol from the crust.

METHOD

To assemble, place the apricot and cherry mixture into the pie shell.

Carefully fold the second pie crust in half and transport over to the pie plate. Place the edge of one side to meet the edge of the base crust then carefully unfold.

Pinch the edges of dough together and fold up to fit the plate.

To beautify – press the edges of the dough between two fingers, creating a wave pattern.

Brush crust with water and sprinkle with extra organic sugar.

Bake for 1 hour until golden brown and bubbly.

Notes + Serving Tips

If the crust is browning too quickly, place foil loosely over the top to prevent over-browning.

Let your pie cool and set before serving.
