INGREDIENTS
1/3 tsp of fresh yeast
1½ cups warm water
4½ cups Caputo ’00’ pizza flour
½ cup Parisienne flour
3 tsp sea salt
TOPPINGS
seasonal veggies
store-bought or homemade marinara sauce
fresh basil, garnish
PREP
Preheat oven to 500°
Lightly flour a metal pizza tray.
METHOD
Combine yeast and warm water in a standing mixer. Mix until dissolved.
Add Caputo flour into the mixer and mix until incorporated, about two minutes.
Add the Parisienne flour and mix until incorporated, about two minutes. Add sea salt and repeat.
Cover with a damp napkin and set aside for 2 hours. Keep in a dry warm area.
Portion into 6 balls of equal size. Place on a lightly floured pizza tray and set aside for another four hours, or until they double in size.
Keep refrigerated until ready to use.
PIZZA TIME
Remove dough from fridge and let set at room temp for about 1 hour.
On a lightly floured surface, roll and stretch the dough balls into flat discs.
Top with homemade or store-bought marinara sauce and veggies and toss the pies in the oven for about 5 to 7 minutes or until crust is lightly charred.
Remove the pizza from the oven and transfer to a cutting board. Drizzle with homemade Cashew Mozzarella Cheese and top with fresh basil.
Wait about 3 to 5 minutes before slicing and serving, to allow the toppings to set slightly.
