INGREDIENTS
2 cups vegetable broth
2 cups leftover sweet potatoes
2 Tbsp brown sugar
pinch of cayenne pepper
¼ cup each of your favorite leftovers including greens, lemon-caper seitan etc.
1 Tbsp leftover herbs from Thanksgiving dinner
sea salt, to taste
freshly ground black pepper, to taste
METHOD
In a pot, bring vegetable broth to a boil and reduce to a simmer, adding the sweet potato one spoonful at a time, whisking to make sure the sweet potato is incorporated.
Add the brown sugar and mix until well incorporated. Let simmer over medium heat for 10 minutes to allow the soup to thicken. Season with sea salt and freshly ground pepper and cayenne pepper to taste.
Heat the leftovers. In a bowl, add the leftovers and then pour the hot soup over the top.

Garnish with leftover herbs.
