Crispy Sweet Potato Latkes

This #MeatlessMonday we’re jumping head first into Chanukah in celebration of the Festival of Lights! Break out your dreidel and gelt, roll up your sleeves, and get to cookin’.

While you’re busy in the kitchen, don’t forget to whip up our Homemade Applesauce + Vegan Sour Cream. Let’s face it, is there any other way to enjoy latkes?

The truth is, it doesn’t have to be Chanukah to enjoy this tasty recipe. Serve it as a side dish with dinner or eat them for breakfast with a Tofu Scramble. Yum!

Word to the wise: make sure you have a heavy duty box grater for this one.

INGREDIENTS

2 large sweet potatos, peeled and grated

1 large yellow onion, grated

1/4 cup all-purpose flour

1 tsp baking powder

1/2 tsp freshly ground pepper

1 tsp sea salt

METHOD

Fill a bowl with lightly-salted water and rinse grated sweat potato. Empty into a sieve and pat dry thoroughly with a wash cloth.

In a bowl, combine grated sweet potato, grated onion, all-purpose flour, baking powder, sea salt, and freshly ground pepper.

Heat olive oil in a non-stick skillet over medium high heat. Spoon 1 tablespoon of mixture at a time into the skillet, making sure they do not touch.

Flatten with a fork and cook until golden brown on each side, about 5 minutes.

Serve with a generous helping of apple sauce and non-dairy sour cream, preferably our delicious homemade versions below.
