How easy is that?
INGREDIENTS
2 lbs of apples, peeled, cored and sliced 1/4-1/2 inch thick
1/2 tsp ground cinnamon
1/4 tsp lemon juice
1/2 cup brown sugar
1/3 cup coconut oil, melted (as needed)
1/2 cup all-purpose flour
1 cup rolled oats
PREP
Preheat oven to 350°.
Coat baking dish with coconut oil or cooking spray.
METHOD
In a large bowl, combine sliced apples, ground cinnamon, lemon juice and sea salt until evenly mixed. Add apple mixture to the baking dish.
In the same bowl, add brown sugar, rolled oats, flour and mix together. Add coconut oil by the teaspoon gradually until it is well incorporated into the flour mixture. It should resemble clumpy wet sand.
Cover apples with the oat and flour mixture. Bake for 30-40 minutes until the apples are tender and the topping is golden brown.
NOTES + SERVING TIPS
Serve with a scoop of vegan vanilla or coconut ice cream. Also tastes great for breakfast.
