Cheeeeeze. Must eat cheese. For many, steering clear of the delicious dairy gift is one of the hardest challenges of the vegan lifestyle. Whether testing the waters, or a committed lifer, sometimes you have the need, the need for cheese. While available in most supermarkets, many vegan cheeses are made of different oils, contain artificial flavors, unhealthy stabilizers and should be used sparingly. So, how can you get your fix at home? Bet you “didn’t know a nut could do that”! #IDKANCDT

That brings us to our new (yes, they’re all new) feature: I Didn’t Know A Nut Could Do That. We’re going to break down all the fun things vegans (or non-vegans) can, and should be making with nuts. Whether a base for an alfredo sauce, or fermented into delicious cheesy alternative wonders a la Williamsburg’s Dr. Cow, nuts are the bee’s knees.

Today, we explore cashews. We’re talking Cashew Mozzarella Cheese, Basic Béchamel, and a Pink Sauce so on fleek, Grandma’s gonna ask you for her recipe.
