Here is one of our favorite + easiest seitan recipes!
This dish is sticky, savory, sweet, and almost effortless to make.

SAUCE
¼ cup hoison sauce
¼ cup water
1 Tbsp soy sauce
1 Tbsp raw agave
1 tsp lemon juice
1 to 2 tsp chili-garlic sauce
SEITAN
2 Tbsp canola oil
8 oz shiitake mushrooms, stemmed and sliced
2 tsp grated fresh ginger
1/8 tsp ground cinnamon
1/8 tsp ground cloves
4 oz snow peas, stings removed
2 scallions, trimmed and thinly sliced
¼ cup chopped fresh cilantro
8 oz seitan, cut into thin strips, purchase here or prepare following our homemade recipe
SERVING
2 cups cooked rice

SAUCE
In a small bowl, whisk together hoisin sauce, water, soy sauce, raw agave, lemon juice, and chili-garlic sauce.
Set aside.
METHOD
In a large skillet, heat oil over medium-high heat and stir-fry shiitake mushrooms and seitan (pre-packaged or homemade) until lightly browned and mushrooms have cooked down.
Add grated ginger, ground cinnamon, and ground cloves; allow to cook a few more minutes.
Add sauce and snow peas to skillet. Reduce heat to medium, and allow to cook until sauce has thickened. This may happen quickly.
Turn off heat and mix in sliced scallions and chopped cilantro.
NOTES + SERVING TIPS
Serve over cooked rice for maximum pleasure!
